1. Avocado & Balsamic Tomatoes

Avocado & Balsamic Tomatoes

Ingredients:

  • 1 slice low protein bread
  • 1/2 avocado, sliced
  • 1 tomato, sliced
  • 1 tbsp. balsamic vinegar or glaze
  • 1/2 Lime

You will also need salt & pepper to season (optional).

Method:

  • Toast low protein bread.
  • Layer slices of tomato and avocado on top of the bread.
  • Squeeze over the juice of half a lime.
  • Season and drizzle over balsamic (vinegar or glaze).

Ingredients:

  • 1 slice low protein bread
  • 1/2 avocado, sliced
  • 30g/1 tbsp. Violife Greek White Cheese
  • 30g/1 tbsp. pomegranate seeds
  • Juice of half a lemon

You will also need salt & pepper to season (optional).

Method:

  • Toast low protein bread.
  • Mash the avocado, cheese, pomegranate and lemon juice together in a bowl.
  • Season & spread mixture on the low protein bread and enjoy!

Avocado, grilled veg & sundried tomatoes

Ingredients:

  • 1 slice low protein bread
  • 1/2 avocado, sliced
  • 1/2 red pepper, sliced and fried
  • 1/2 cup mushroms, sliced and fried
  • 3 sundried tomatoes, sliced

You will also need salt & pepper to season (optional).

Method:

  • Toast low protein bread.
  • Layer on 1/2 avocado.
  • Top with cooked peppers and mushrooms. Top with sundried tomatoes.
  • Season & serve.
