Burrito Bowl


  • 1/2 avocado
  • 1/2 courgette, spiralised or grated
  • 1 cup Violife Cheese Original Block, Grated
  • 1/2 red pepper, sliced
  • 4 mushrooms, chestnut

You will also need 1 tbsp garlic or other oil, salt and pepper.

Optional extras:

  • 1 tbsp salsa
  • 1/2 mango, chopped
  • 1 tbsp soured cream (Old El Paso)
  • 1 tomato, chopped


  • Spiralise or grate courgette.
  • Mash avocado, mix in 1/2 chopped tomato (optional) and season with salt and pepper.
  • Saute peppers and mushrooms in garlic or other oil, for 10 minutes.
  • Mix mango with 1/2 tomato (optional extra only).
  • Assemble all ingredients in a bowl and enjoy. Why not serve with low protein rice?
