Burrito Bowl

- 1/2 avocado
- 1/2 courgette, spiralised or grated
- 1 cup Violife Cheese Original Block, Grated
- 1/2 red pepper, sliced
- 4 mushrooms, chestnut
You will also need 1 tbsp garlic or other oil, salt and pepper.
Optional extras:
- 1 tbsp salsa
- 1/2 mango, chopped
- 1 tbsp soured cream (Old El Paso)
- 1 tomato, chopped
Method:
- Spiralise or grate courgette.
- Mash avocado, mix in 1/2 chopped tomato (optional) and season with salt and pepper.
- Saute peppers and mushrooms in garlic or other oil, for 10 minutes.
- Mix mango with 1/2 tomato (optional extra only).
- Assemble all ingredients in a bowl and enjoy. Why not serve with low protein rice?
