QUICK & EASY CHOW MEIN STIR FRY

For x1 portion

Ingredients:

  • 60g low protein noodles/spaghetti
  • 1/3 red pepper
  • 1/3 yellow pepper
  • 60g broccoli (1 exchange)
  • 60g sugar snaps (1 exchange)
  • x2 mushrooms
  • X2 baby corn
  • 1/6 courgette
  • ½ pack of suitable Chow Mein sauce (See NSPKUs approved list)

Method:

  • Boil the low protein noodles/spaghetti for ~10mins
  • Add the veggies to a pan and fry for ~5-8mins
  • Drain the noodles and add to the pan
  • Add the sauce and stir for 1min
  • Serve & enjoy!
