Cucumber, Feta and Pomegranate Bites
- 1 cucumber
- ½ pack Violife Greek style cheese (or soft spreadable cheese/blue cheese).
- Juice of half a lemon
- 2 tbsp. pomegranate
- 2-3 sprigs dill
- Chop the cucumber into 3cm rounds, discarding the pointy ends. With a small spoon, dig out some of the flesh from each cucumber.
- In a mixing bowl, add the cheese, dill and pomegranate. Mash together until crumbly. Add the lemon juice and stir again.
- Fill the cucumber with the cheese mix. Top with some more fresh dill and serve!
