Ingredients:

  • ½ tin jackfruit drained
  • ½ green pepper
  • ½ red pepper
  • 2 mushrooms
  • ¼ red onion
  • sweetcorn (1 exchange)
  • 2-3 gluten free fajita wraps (~1.5-2ex – check label)
  • 1 tbsp taco seasoning
  • 1-2 lettuce leaves
  • Salsa/Guacamole
  • Grated vegan cheese

Method:

  • Fry jackfruit, peppers, mushrooms, and onion until soft – add seasoning.
  • Add the cooked sweetcorn and stir
  • Heat the tortilla wraps in the microwave for 10-20secs
  • Then assemble the tortillas – lettuce, filling, sprinkle with cheese & top with salsa/guac
  • Serve & enjoy!
