- ½ tin jackfruit drained
- ½ green pepper
- ½ red pepper
- 2 mushrooms
- ¼ red onion
- sweetcorn (1 exchange)
- 2-3 gluten free fajita wraps (~1.5-2ex – check label)
- 1 tbsp taco seasoning
- 1-2 lettuce leaves
- Grated vegan cheese
- Fry jackfruit, peppers, mushrooms, and onion until soft – add seasoning.
- Add the cooked sweetcorn and stir
- Heat the tortilla wraps in the microwave for 10-20secs
- Then assemble the tortillas – lettuce, filling, sprinkle with cheese & top with salsa/guac
- Serve & enjoy!
