Loaded Chips

Ingredients:
- 50g red pepper
- 50g green pepper
- 100g Violife Original Block (grated)
- 35g cherry tomatoes
- 50g yellow pepper
- 35g onion
- 5g green chilli
- 10g spring onion
- 1 medium sweet potato (cut into chips)
Method:
- Pour over oil and season chips with salt and pepper
- Mix together and place in the oven for 15-20 minutes at 200 C
- Heat oil in the pan and add onion, red pepper, green pepper, yellow pepper and season
- Fry for 5-10 minutes until vegetables soften
- Add the tomatoes and mix through
- On a plate, pour over the vegetables and add the cheese. Microwave for 2-3 minutes
- Sprinkle over spring onion and green chilli
