Loaded Chips

Ingredients:

  • 50g red pepper
  • 50g green pepper
  • 100g Violife Original Block (grated)
  • 35g cherry tomatoes
  • 50g yellow pepper
  • 35g onion
  • 5g green chilli
  • 10g spring onion
  • 1 medium sweet potato (cut into chips)

Method:

  • Pour over oil and season chips with salt and pepper
  • Mix together and place in the oven for 15-20 minutes at 200 C
  • Heat oil in the pan and add onion, red pepper, green pepper, yellow pepper and season
  • Fry for 5-10 minutes until vegetables soften
  • Add the tomatoes and mix through
  • On a plate, pour over the vegetables and add the cheese. Microwave for 2-3 minutes
  • Sprinkle over spring onion and green chilli
