Vegetable Samosas


  • 100g carrot (boiled and mashed)
  • 170g potato (boiled and mashed)
  • 2 tbsp vegetable oil
  • 2 tbsp low protein flour
  • Handful fresh coriander
  • 1/2 onion (diced)
  • 1 tbsp ground coriander
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper


  • Heat 1/2 of oil in the pan and add onions
  • Cook for 5 minutes or until soft
  • Add cumin, coriander and cayenne pepper and cook for a further minute
  • Set aside to cool
  • In a bowl add carrot, sweet potato, coriander and onions and mix well
  • Place the flour into a bowl and mould the mixture into triangles
  • Coat all sides with the flour
  • Heat the remaining oil and place samosas into the pan
  • Cook for several minutes until golden brown
  • Serve with sweet chilli sauce!
