Persian Salad

Ingredients
- 1/3 cucumber, sliced
- 2 tomatoes, sliced
- 1 tbsp. fresh pomegranate seeds
- 2-3 sprigs parsley
- 1 tbsp. sweet balsamic glaze or pomegranate molasses
Method
- Slice the tomatoes and 1/3 of the cucumber into rounds.
- Arrange the tomatoes and cucumber on to your plate.
- Sprinkle over the pomegranate and parsley and then drizzle over the dressing.
- Serve on its own or alongside your favourite low protein rice or bread.
