Persian Salad

Ingredients

  • 1/3 cucumber, sliced
  • 2 tomatoes, sliced
  • 1 tbsp. fresh pomegranate seeds
  • 2-3 sprigs parsley
  • 1 tbsp. sweet balsamic glaze or pomegranate molasses

Method

  • Slice the tomatoes and 1/3 of the cucumber into rounds.
  • Arrange the tomatoes and cucumber on to your plate.
  • Sprinkle over the pomegranate and parsley and then drizzle over the dressing.
  • Serve on its own or alongside your favourite low protein rice or bread.
