Ingredients

  • ½ tin chopped tomatoes
  • ½ carrot, thinly chopped
  • ¼ red pepper
  • ¼ green pepper
  • 25g peas (1 exchange)
  • ¼ courgette, chopped
  • ¼ aubergine, diced
  • 1 tsp chilli powder
  • 1 tsp oregano
  • 1 garlic clove
  • Suitable vegan cheese
  • Serve with either: Low protein rice, sweet potato mash and/or suitable pitta/grilled wrap

Method

  • Fry the veggies in the seasonings for 5-8 mins.
  • Boil the rice at the same time or microwave the sweet potato for mash.
  • Add the chopped tomatoes and peas and simmer for 4 mins.
  • Drain the rice or mash the sweet potato and pour the chilli over the top.
  • Sprinkle with cheese & ENJOY!
