Low Protein Spiced Carrot and Orange Soup (PKU)
Ingredients:
- 2 small oranges, zested and juiced
- 1/2 tbsp olive oil
- 1 small onion, grated
- 400g carrots
- 1 sliced/deseeded red chilli
- 500ml vegetable stock
Method:
- Heat oil in a saucepan and add onion, carrot and chilli
- Cover and heat for 5 minutes
- Pour in stock and simmer for 10 minutes
- Add orange juice and zest
- Cool and blend together
- Enjoy with low protein bread
