Low Protein Spiced Carrot and Orange Soup (PKU)

Ingredients:

  • 2 small oranges, zested and juiced
  • 1/2 tbsp olive oil
  • 1 small onion, grated
  • 400g carrots
  • 1 sliced/deseeded red chilli
  • 500ml vegetable stock

Method:

  • Heat oil in a saucepan and add onion, carrot and chilli
  • Cover and heat for 5 minutes
  • Pour in stock and simmer for 10 minutes
  • Add orange juice and zest
  • Cool and blend together
  • Enjoy with low protein bread
