Thai Curry

Ingredients:

  • 2 cups low protein vegetables, finely chopped
  • 1/2 jar thai curry sauce (blue dragon)
  • 1/2 onion, finely chopped
  • 1/2 tin coconut milk (Amoy Rich and Creamy)

Serve with low protein rice.

Method:

  • Fry onion in 1 tbsp. oil until browned.
  • Add vegetables and stir for 5 minutes.
  • Add thai sauce and stir for 1 minute.
  • Add coconut milk and stir for 5 minutes.
  • Serve with low protein rice.
