Low Protein Xmas Cake (PKU)


  • 100g unsalted butter
  • 150g dark brown sugar
  • 3 tsp mixed spice
  • 300g mix dried fruits and peel
  • 350g low protein flour
  • 2 tbsp any syrup
  • 250ml fresh coconut milk
  • 20g egg replacer


  • Preheat oven to 180’C / Gas mark 5
  • Cream together butter and sugar
  • Add mixed spice and stir
  • Add dried mixed fruits and peel
  • Add flour and stir together
  • In a separate bowl, mix the milk, syrup and egg replacer
  • Add this to the cake mixture and mix until combined
  • Press into a lined cake tin
  • Bake for 45 minutes or until golden brown
  • Decorate with icing sugar and low protein edible cake toppers
